Christmas sprinkle cookies are a festive way to celebrate the holidays! These cookies are soft, chewy, and flavored with vanilla and almond extract and coated in festive sprinkles! Perfect for a Christmas party!
In the bowl of a stand mixer fitted with a paddle attachment or in a large bowl with an electric hand mixer, cream the unsalted butter and granulated sugar until light and fluffy. Add the eggs, vanilla extract, and almond extract and mix on low speed until smooth. Add the all-purpose flour, cornstarch, baking powder, baking soda, and salt and mix on low speed until the cookie dough comes together.
Portion the cookie dough using a medium cookie scoop. Roll the cookie dough balls in holiday nonpareil sprinkles and place on a parchment lined baking pan. Chill the dough balls for 30 minutes.
Preheat the oven to 350℉ (177℃). Line baking sheet pans with silicone baking mats or parchment paper.
Place the cookie dough balls on the cookie sheet allowing room for spreading. Bake the cookies for about 12 minutes until the edges are set. Cool the cookies on the pan for 2 minutes and transfer to a wire rack to cool completely.

Store the cookies in an airtight container or resealable storage bag at room temperature for 2 to 3 days.
