These cake mix cookies are a quick, fun, and easy cookie recipe to satisfy your sweet tooth. Use your favorite flavor of cake mix and mix and match with frostings to create a totally custom cookie thatโ€™s as easy as it is delicious!

Bust out the Aqua Net and preheat that oven, babeโ€”because weโ€™re about to bake it like itโ€™s 1985.ย These cake mix cookies are totally rad, ridiculously quick and easy to make, andย like, majorly delicious.ย All you need is a box of cake mix, a few simple ingredients, and a love for all things sweet.

These cookies are givingย full mixtape energyโ€”one base, infinite remixes. Just like picking your fave track on a cassette, you get to mix and match cake mix flavors and frosting combos to make the perfect easy dessert. Feelingย funfetti with vanilla frosting? Go for it. Want to rockย chocolate cake mix with peanut butter frosting? Thatโ€™s, like, totally metal. Because when it comes to cake mix cookies,ย there are no rulesโ€”only radical combos.ย

Cake Mix Cookies

  • Boxed cake mix (15.25 ounces)
  • Unsalted butter
  • Eggs

Vanilla Frosting

  • Unsalted butter
  • Powdered sugar
  • Vanilla extract
  • Salt
  • Heavy cream

How to Make Cake Mix Cookies

  1. Prep: Preheat the oven and lineย baking sheet pansย withย silicone matsย orย parchment paper.
  2. Make the cookie dough: Mix the cake mix, melted butter, and eggs together until the cookie dough forms.
  3. Bake the cookies: Scoop the cookie dough with aย large cookie scoop. Bake the cookies for 12 to 13 minutes and then transfer the cookies to aย cooling rack.
  4. Make the frosting: Whip the butter until light and creamy. Add in the powdered sugar, vanilla extract and salt. Drizzle in the heavy cream and then mix the frosting for a few minutes until smooth and creamy.
  5. Frost the cookies: Use a piping bag fitted with a Wilton 1M piping tip to frost the cookies and decorate with rainbow sprinkles.

Courtney’s Expert Baking Tips

  • Use a large cookie scoop to perfectly portion out the cookie dough to create uniform sized cookies.
  • Immediately when the cookies come out of the oven, use the back of a spoon to gently shape the cookies into a perfectly round circle.
  • Do not overtake the cookies. The cookies should be set on the edges and puffed up in the center. Overbaking can lead to a dry and crumbly texture.

Can you add mix-ins to the cookie dough?

Yes! Feel free to add 1 cup of add-ins to the cookie dough. Some delicious options include semi-sweet chocolate chips, M&M candies, white chocolate chips, peanut butter chips, dark chocolate chips, nuts (almonds, pecans, walnuts), butterscotch chips, coconut flakes, or toffee bits. You could also sprinkle these onto the frosting cookies if you prefer!

What are some delicious flavor combinations to try?

There are so many fun and delicious flavors to try out but some of my personal favorites are: red velvet cake mix cookies with cream cheese frosting, chocolate cake mix cookies with peanut butter frosting, strawberry cake mix cookies with cream cheese frosting, and lemon cake mix cookies with lemon frosting. And yes, you can totally go with premade frosting if you prefer!

What brand cake mix should I use?

Whether you are a Betty Crocker babe, a Duncan Hines diehard, or passionate for Pillsbury, any 15.25 ounce cake mix will do! I’ve tested this recipe with several varieties (including generic grocery store brands) and they have all come out delicious!

These cake mix cookies are soft, sweet, and incredibly easy to makeโ€”perfect for when you need a quick treat! Start with your favorite boxed cake mix, add a few simple ingredients, and mix and match flavors and frostings to create your own favorite flavor combination. From funfetti to devilโ€™s food, the possibilities are endless and always delicious!

Ingredients 

Funfetti Cake Mix Cookies

  • 15.25 oz (432 g) boxed cake mix (For this recipe, I used Funfetti cake mix)
  • ยฝ cup (114 g) unsalted butter (melted)
  • 2 (2) eggs (room temperature)

Vanilla Buttercream Frosting

  • ยพ cup (170 g) unsalted butter (room temperature)
  • 2 cups (240 g) powdered sugar
  • 1 tsp (1 tsp) vanilla extract
  • โ…› tsp (0.1 tsp) salt
  • 2 tbsp (30 g) heavy cream

Additional Ingredients

  • ยผ cup (40 g) colorful sprinkles

Instructions

Funfetti Cake Mix Cookies

  • Preheat the oven to 350โ„‰ (177โ„ƒ). Lineย baking sheet pansย withย silicone baking matsย orย parchment paper.
  • In a large mixing bowl, add the cake mix, melted unsalted butter, and eggs, and mix with a spoon until the ingredients are well combined and the cookie dough forms.
  • Use aย large cookie scoopย (3 tablespoons) to portion the cookie dough and place on the prepared baking sheet pans, allowing room for spreading. Bake the cookies for 12 to 13 minutes until the edges are set and the centers puff up. Cool the cookies on the pan for 2 minutes and then transfer to aย wire rackย to cool completely.

Vanilla Buttercream Frosting

  • In the bowl of a stand mixer fitted with a paddle attachment or in a large bowl with an electric hand mixer, cream the unsalted butter for about 5 minutes until light and creamy.
  • Add in the powdered sugar, vanilla extract, and salt, and mix on low speed until well combined. Scrape the sides and bottom of the bowl as needed. Drizzle in the heavy cream. Turn the mixer to medium speed and whip the frosting for 2 to 3 minutes until smooth and creamy.

Assembling the Cookies

  • Fill a piping bag fitted with a Wilton 1M piping tip with the vanilla buttercream frosting. Pipe a generous swirl of frosting onto the cookies and decorate with colorful sprinkles.

Storing & Serving
  • Room temperature: Store the cookies in an airtight container at room temperature for 2 to 3 days.
  • Refrigerator: Store the frosted cookies in an airtight container in the refrigerator for 3 to 4 days. Serve at room temperature for the best taste and texture.
