How to Make Cosmic Brownie Rice Krispie Treats

Can I use regular Rice Krispies instead of chocolate Rice Krispies?

These Cosmic Brownie Rice Krispie Treats combine rich chocolate rice krispie treats, chunks of Cosmic Brownies, a smooth chocolate coating, and colorful rainbow chip candies into one fun, nostalgic no-bake dessert. Easy to make and packed with chocolate flavor in every bite, these over-the-top bars are perfect for parties, special occasions, or anytime your sweet tooth needs something extra.

Ingredients 

Cosmic Brownie Rice Krispie Treats

  • ½ cup (114 g) unsalted butter
  • 20 oz (567 g) mini marshmallows
  • ½ cup (90 g) semisweet chocolate chips
  • 2 tsp (2 tsp) vanilla extract
  • ½ tsp (½ tsp) salt
  • 7 cups (196 g) cocoa Rice Krispies cereal
  • 2 cups (100 g) mini marshmallows
  • 6 (6) Cosmic Brownies (cut into small pieces)

Additional Ingredients

  • 1 ½ cups (270 g) semisweet chocolate chips
  • 1 tbsp (14 g) coconut oil (substitute with shortening)
  • ¼ cup (60 g) rainbow chip candies (find on Amazon or substitute with mini M&M candies)
  • 3 (3) Cosmic Brownies (cut into small pieces)

Instructions

  • Prepare a 9×13 baking pan with nonstick cooking spray and parchment paper. Extend the parchment paper up the sides of the pan to easily remove the rice krispie treats from the pan.
  • In a large saucepan on the stovetop over medium-low heat, melt the unsalted butter. Add in 20 ounces of mini marshmallows and stir until the marshmallow mixture is melted and smooth. Remove the saucepan from the heat. Stir in the semisweet chocolate chips, vanilla extract, and salt. Then, fold in the cocoa Rice Krispies cereal and additional mini marshmallows.
  • Spread half of the rice krispie treat mixture into the prepared baking pan. Moisten your hands with water, and gently press the mixture into the pan creating an even layer.
  • Sprinkle the cosmic brownie pieces over the rice krispie treat mixture in an even layer. Then, spread the remaining rice krispie treat mixture evenly over the brownies. Lightly moisten your hands with water, then gently press the mixture into the pan to create an even layer.
  • In a heat-safe bowl, combine the semisweet chocolate chips and coconut oil. Microwave in 30-second intervals, stirring between each, until smooth and fully melted. Pour the chocolate over the rice krispie treats and use an offset spatula to spread it into an even layer.
  • Sprinkle the rainbow chip candies over the melted chocolate, then finish with the additional cosmic brownie pieces, gently pressing them into the top.
  • Allow the rice krispie treats to set in the pan for 1 hour before removing and slicing into squares. For cleaner cuts, chill the bars for 30 minutes to help the chocolate layer firm up.

Notes

Storing & Serving:
  • Room temperature: Store the rice krispie treats in an airtight container or resealable storage bag at room temperature for 2 to 3 days.
  • Refrigerator/Freezer: I do not recommend storing rice krispie treats in the refrigerator or freezer, as it can affect their soft and chewy texture. However, you can briefly chill the bars before cutting to help them firm up and make slicing easier.
