Ingredients for Halloween Cookie Cake
Chocolate Chip Cookie Cake
- Unsalted butter – Melted.
- Brown sugar – Light brown sugar, packed.
- Egg + egg yolk – Large egg, room temperature, plus one egg yolk.
- Vanilla extract – Pure vanilla extract is best.
- All-purpose flour
- Baking soda – Leavening agent to help the bars rise.
- Salt – Enhances the flavors and contrasts some of the sweetness.
- Chocolate chips – Use your favorite – semi-sweet chocolate chips, dark chocolate chips, or milk chocolate chips! You could use chocolate chunks or chopped chocolate bars if you prefer.
Vanilla Buttercream Frosting
- Unsalted butter – Room temperature.
- Powdered sugar – Confectioners’ sugar or icing sugar.
- Salt – A pinch of salt provides some contrast to the sweetness of the buttercream.
- Vanilla extract – Pure vanilla extract adds amazing vanilla flavor.
- Heavy cream – Creates smooth and creamy buttercream.
- Gel food coloring – Tint the buttercream frosting to your favorite Halloween colors.

How to Make Chocolate Chip Cookie Cake
- Preheat the oven to 350 degrees F. Prepare an 8-inch cheesecake pan or springform pan with nonstick cooking spray and a parchment circle.
- In a large bowl, stir together melted butter and brown sugar until smooth. Add in the egg, egg yolk and vanilla extract.
- Then, add in the dry ingredients (all-purpose flour, baking soda, and salt) to the wet ingredients. Mix until a soft dough forms. Then, fold in the chocolate chips.
- Spread the chocolate chip cookie dough in an even layer in the prepared pan.
- Bake the bars for approximately 25 to 30 minutes until the top and edges are golden-brown. Remove the pan from the oven and place on a wire rack cool to room temperature.
- Remove the cookie cake from the pan by running a sharp knife along the edge of the pan and pressing up on the bottom of the cheesecake pan or removing the sides of the springform pan.
How to Make Vanilla Buttercream Frosting
- With a stand mixer fitted with a paddle attachment or electric hand mixer, whip the room temperature butter until light, fluffy, and pale in color.
- Add powdered sugar, vanilla extract and salt and mix on the lowest speed until combined.
- Drizzle in the heavy cream and continue to mix on low.
- Turn the mixer to medium speed and whip the buttercream for about 3 minutes to get the desired consistency.
- To tint the buttercream, divide the frosting into bowls and add drops of gel food coloring to make your favorite spooky colors.
Decorating the Cookie Cake
Be creative and decorate the cookie cake however you would like! Use colorful buttercream, add Halloween candies or fun Halloween sprinkles.

Halloween Cookie Cake Recipes Tips
- If you don’t have a cheesecake pan or springform pan, you can use a cake pan. Be sure to line the bottom of the cake pan with a parchment circle and wait until the cookie is completely cooled before inverting out of the pan.
- If you would like to tint the buttercream different colors, simply divide the buttercream into bowls, add a few drops of gel food coloring and mix until well combined and smooth.
- Decorate the cookie cake however you would like! Use your favorite piping tips, sprinkles and even Halloween candies.
- Store the cookie cake in an airtight container at room temperature for 1 to 2 days or in the refrigerator for 2 days. Serve at room temperature for the best results.

- 1 ½ cups all-purpose flour
- ½ tsp baking soda
- ½ tsp salt
- 1 cup semi-sweet chocolate chips or preferred chocolate
Vanilla Buttercream Frosting
- 1 cup unsalted butter room temperature
- 2 ½ cups powdered sugar
- 2 tsp vanilla extract
- ¼ tsp salt
- 2 tbsp heavy cream
- gel food coloring
Instructions
Chocolate Chip Cookie Cake
- Preheat oven to 350℉. Prepare an 8-inch cheesecake pan or springform pan with nonstick cooking spray and a parchment circle.
- In a large mixing bowl, mix together the melted unsalted butter and light brown sugar until smooth. Add in the room temperature egg, egg yolk, and vanilla extract and stir to combine.
- Add in the all-purpose flour, baking soda and salt. Mix until a soft dough forms. Fold in the semi-sweet chocolate chips.
- Spread the chocolate chip cookie dough in an even layer in the prepared cake pan and bake for approximately 25 to 30 minutes until the top and edges are golden-brown.
- Remove the pan from the oven and cool the cookie cake to room temperature. To remove the cookie from the pan, run a knife along the edges of the pan remove the bottom of the pan from the sides.
Vanilla Buttercream Frosting
- In the bowl of a stand mixer fitted with a paddle attachment, whip the butter on medium-high speed for 5 minutes until pale and creamy.
- Add the powdered sugar and mix on low speed until fully incorporated with the butter. While mixing on low, add the salt and vanilla extract.
- Slowly drizzle in the heavy cream until fully incorporated. Scrape the sides and bottom of the bowl as needed. Turn the mixer to medium speed and whip the buttercream for 2 to 3 minutes until smooth and creamy.
- If desired, divide the buttercream and tint using gel food coloring.
