These fluffernutter rice krispie treats are a gooey, nostalgic twist on a favorite. This mash-up of classic rice krispie treats and a fluffernutter sandwich is made with creamy peanut butter, gooey marshmallows, marshmallow fluff, and crispy rice cereal for bars that are chewy, crunchy, and packed with peanut butter flavor.

They’re loaded with enough marshmallowy goodness to make the Stay Puft Marshmallow Man proud.

Easy, no-bake, and totally nostalgic, these bars feel like the kind of after-school snack you’d devour while watching Ghostbusters on VHS. Just remember: don’t cross the streams… unless it’s peanut butter and marshmallow.

  • Mini marshmallows
  • Peanut butter – Use regular old-fashioned creamy peanut butter.
  • Vanilla extract
  • Salt
  • Rice krispies cereal
  • Marshmallow fluff – Marshmallow creme.

How to Make Fluffernutter Rice Krispie Treats

Melt the butter and stir in the mini marshmallows until melted and smooth. Add in the peanut butter, vanilla, and salt.

Stir in the crispy rice cereal and additional mini marshmallows.

Pour half of the mixture into the prepared pan and spread into an even layer.

Add the remaining half of the rice krispie treat mixture and gently press into an even layer.

Press additional mini marshmallows into the top of the bars and allow the rice krispie treats to set up for 1 hour before cutting into squares.

Courtney’s Expert Baking Tips

  • Line the baking pan with parchment paper extending up the sides of the pan for easy removal.
  • Gently press the rice krispie treat mixture into the pan. Do not press down too firmly or the rice krispie treats will have a hard texture. 
  • The easiest way to spread the rice krispie treat mixture is to use your hands. Wet your hands with a little bit of water to prevent the mixture from sticking. 
  • Use a piping bag to easily pipe the marshmallow fluff and peanut butter into the middle of the rice krispie treats.
  • If the peanut butter for the filling is too thick, melt the peanut butter the microwave for 15-20 seconds before piping over the first layer of rice krispie treats.
  • Let the rice krispie treats sit for at least 1 hour before cutting to allow them to fully set.
  • Use a serrated knife and a sawing motion to cut the treats into perfect squares.

How can I prevent the rice krispie treat mixture from sticking to my hands?

The easiest way to prevent the rice krispie treat mixture from sticking to your hands is to moisten your hands with water before pressing the mixture into the pan.

Can I use crunchy peanut butter instead of creamy?

Yes. Crunchy peanut butter will add a little extra texture and nutty flavor to the treats. Either creamy or crunchy peanut butter works well in this recipe.

Can I use mini marshmallows instead of marshmallow fluff in the center?

Yes. If you don’t have marshmallow fluff, you can substitute additional mini marshmallows in the center of the rice krispie treats. Sprinkle a generous layer of mini marshmallows over the first layer of rice krispie treat mixture before adding the top layer.

These fluffernutter rice krispie treats are a gooey, nostalgic twist on the classic no-bake dessert. Made with creamy peanut butter, marshmallows, marshmallow fluff, and crispy rice cereal, they’re chewy, crunchy, and packed with sweet peanut butter flavor. Easy to make and perfect for sharing, these treats are a fun mash-up of classic rice krispie treats and a fluffernutter sandwich.

Ingredients 

  • ½ cup (114 g) unsalted butter
  • 20 oz (567 g) mini marshmallows (2 – 10 oz bags)
  • 1 cup (258 g) creamy peanut butter
  • 2 tsp (2 tsp) vanilla extract
  • ½ tsp (0.5 tsp) salt
  • 7 cups (196 g) Rice Krispies cereal
  • 2 ½ cups (125 g) mini marshmallows (divided – 2 cups for the rice krispie treat mixture and ½ cup for the top)
  • 1 cup (127 g) marshmallow fluff
  • cup (86 g) creamy peanut butter

Instructions

  • Prepare a 9×13 baking pan with nonstick cooking spray and parchment paper. Extend the parchment paper up the sides of the pan to easily remove the rice krispie treats from the pan.
  • In a large saucepan on the stovetop over medium-low heat, melt the unsalted butter. Add in 20 ounces of mini marshmallows and stir until the marshmallow mixture is melted and smooth. Remove the saucepan from the heat.
  • Stir in the 1 cup of creamy peanut butter, vanilla extract, and salt. Then, fold in the Rice Krispies cereal and additional 2 cups of mini marshmallows until the cereal is well coated in the melted marshmallow mixture.
  • Pour half of the rice krispie treat mixture into the prepared baking pan and spread into an even layer.
  • Fill a piping bag with the marshmallow fluff and pipe an even layer of fluff over the rice krispie treat bars. Then, fill another piping bag with the additional creamy peanut butter and pipe over the marshmallow fluff.
  • Carefully spread the remaining rice krispie treat mixture over the marshmallow fluff and peanut butter. Moisten your hands with water, and gently press the mixture into the pan creating an even layer. Press the remaining ½ cup of mini marshmallows into the top of the bars.
  • Allow the rice krispie treats to set up in the pan for 1 hour before removing and cutting into squares.

Notes

Storing & Serving:
  • Room temperature: Store the rice krispie treats in an airtight container or resealable storage bag at room temperature for 2 to 3 days.
  • Refrigerator/Freezer: I do not recommend storing rice krispie treats in the refrigerator or freezer as it can impact the texture.
