Girls just wanna have fun…fetti rice krispie treats! This fun twist on a nostalgic treat is bringing the party harder than a roller rink birthday party bash in 1985. Weโ€™re talkinโ€™ crispy rice cereal, gooey marshmallows, and tons of colorful rainbow sprinkles. The super secret ingredient? Cake mixโ€“to give these ooey, gooey, and chewy treats that signature funfetti flavor. 

Think of these bars as the Lisa Frank of dessertsโ€”bold, bright, and unapologetically extra. Theyโ€™re giving Care Bears meets confetti cannon, with a side of Rainbow Brite. The recipe is super easy to make and comes together before you can blow out Sixteen Candles. So crank up the synth, pass the sprinkles, and letโ€™s get this sweet party started.

  • White cake mix
  • Unsalted butter
  • Mini marshmallows
  • Vanilla extract
  • Salt
  • Rice Krispies cereal

How to Make Funfetti Rice Krispie Treats

  1. Prep: Prepare a 9×13 baking pan with nonstick cooking spray and parchment paper.
  2. Heat-treat: Heat-treat the cake mix in the microwave.
  3. Melt: Melt the butter and stir in the mini marshmallows until melted and smooth.
  4. Add: Add in the cake mix, vanilla, and salt. Stir in the crispy rice cereal and additional marshmallows.
  5. Spread: Pour the mixture into the prepared pan and gently press into an even layer. Sprinkle the top of the bars with rainbow sprinkles.
  6. Set: Allow the rice krispie treats to set up for 1 hour and then cut into squares.

Courtney’s Expert Baking Tips

  • Line the baking pan with parchment paper extending up the sides of the pan for easy removal.
  • Gently press the rice krispie treat mixture into the pan. Do not press down too firmly or the rice krispie treats will have a hard texture.
  • The easiest way to spread the rice krispie treat mixture is to use your hands. Wet your hands with a little bit of water to prevent the mixture from sticking.
  • Use a serrated knife and a sawing motion to cut the treats into perfect squares.

Do I have to heat-treat the cake mix?

Anytime you are eating raw cake mix, it is important to heat-treat it to remove any present bacteria. Heat-treating is a quick and easy step to ensure that the cake mix is safe for raw consumption.

Can I stir rainbow sprinkles into the rice krispie treat mixture?

You can, but I don’t recommend it. I tested this recipe with folding the sprinkles directly into the rice krispie treat mixture, but the sprinkles bled and it turned the bars a dull gray color. As much as it would be fun to have the sprinkles throughout, I don’t love the way it turned out.

How can I prevent the mixture from sticking to my hands?

The easiest way to prevent the rice krispie treat mixture from sticking to your hands is to moisten your hands with water before pressing the mixture into the pan.

Theseย funfetti rice krispie treatsย are a sweet, sprinkle-filled twist on the classic no-bake favorite! Made with gooey marshmallows, crisp rice cereal, a touch of cake mix for that irresistible birthday cake flavor, and a generous handful of rainbow sprinkles, theyโ€™re as fun to make as they are to eat. Perfect for parties, bake sales, or any day that needs a little extra color and joy!

Ingredients 

  • 1 cup white cake mix
  • ยฝ cup unsalted butter
  • 20 oz mini marshmallows
  • 2 tsp vanilla extract
  • ยฝ tsp salt
  • 7 cups Rice Krispies cereal
  • 2 cups mini marshmallows
  • โ…“ cup rainbow sprinkles

Instructions

  • First, heat-treat the white cake mix. Pour the cake mix into a microwave-safe bowl. Heat in the microwave in 30 second intervals, stirring in between, until the cake mix reaches 160โ„‰ (71โ„ƒ), approximately 1 to 1 ยฝ minutes total. Run the cake mix through a fine mesh strainer and set aside to cool.
  • Prepare a 9×13 baking pan with nonstick cooking spray and parchment paper. Extend the parchment paper up the sides of the pan to easily remove the rice krispie treats from the pan.
  • In a large saucepan on the stovetop over medium-low heat, melt the unsalted butter. Add in 20 ounces of mini marshmallows and stir until the marshmallow mixture is melted and smooth. Remove the saucepan from the heat.
  • Stir in the heat-treated cake mix, vanilla extract, and salt. Then, fold in the Rice Krispies cereal and additional 2 cups of mini marshmallows until the cereal is well coated in the melted marshmallow mixture.
  • Pour the rice krispie treat mixture into the prepared baking pan. Moisten your hands with water, and gently press the mixture into the pan creating an even layer. Sprinkle the rainbow sprinkles over the top of the rice krispie treat bars.
  • Allow the rice krispie treats to set up in the pan for 1 hour before removing and cutting into squares.

Notes

Storing & Serving:
  • Room temperature: Store the rice krispie treats in an airtight container or resealable storage bag at room temperature for 2 to 3 days.
  • Refrigerator/Freezer: I do not recommend storing rice krispie treats in the refrigerator or freezer as it can impact the texture.
